Ingredients

  • 1 Sweet White Onion
  • 3 Celery Stalks (sliced)
  • 1 Orange or Red Bell Pepper (seeded & chopped)
  • 3 Tablespoons Oil
  • 4 Garlic Cloves (chopped)
  • 14.5 ounce Can Diced Fire Roasted Tomatoes
  • 24 ounce Jar Tomato Pasta Sauce
  • 32 ounces Vegetable Stock
  • 4 Cups Water
  • 1 Tablespoon Italian Seasoning (optional)
  • 15.5 ounce Can Kidney Beans (drained, rinsed)
  • 1 Cup Frozen Corn
  • 1 Cup Frozen Peas and Carrots
  • 2-3 Cups Baby Spinach

Instructions

  • In large soup pot, sauté onion, celery and bell pepper in oil over medium high heat. Add garlic and sauté 1 minute.
  • Add tomatoes, tomato sauce, vegetable stock and water to pot. Reduce heat and simmer for 15 minutes.
  • Add beans, corn, peas, carrots and spinach. Simmer 10-15 minutes. Salt and pepper to taste, top with fresh parsley and serve.
