Ingredients

  • Lbs Baby Dutch Potatoes
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Dry Ranch Mix
  • 1-2 Cups Shredded Colby/Jack Cheese

Instructions

  • Preheat oven to 400ºF
    Cut potatoes in halves or quarters, all equal in size.
    Toss potatoes with oil and ranch mix. Transfer to rimmed baking sheet sprayed with nonstick. Arrange potatoes in an even layer.
    Bake for 25 minutes, toss half way through cooking time.
    Once potatoes are fork tender, top with shredded cheese and return to the oven for 1 minute to melt.
    Top with chopped parsley and serve immediately.
