Prevent your screen from going to sleep
For Fried Salami
Slice salami into strips and cook over medium heat until crispy like bacon (about 5-7 minutes).
Stir frequently while frying.
When crisp, transfer to a paper towel to absorb the grease.
For Sauce
In a large saute pan over medium/low heat; combine the olive oil, roasted garlic, salt/pepper and red pepper flakes.
Add the cherry tomatoes and cook for about 15 minutes or until the tomatoes begin to burst and the sauce turns a burnt orange color.
Assembly
Immediately toss cooked pasta with the tomato sauce.
Add the mozzarella then top with fried salami and basil.
Salt and Pepper to taste.
