Instructions
Mix olive oil, balsamic vinegar, blueberry preserves, mustard, salt and pepper. Whisk until fully combined and emulsified.
Mix spinach, blueberries, pecans, sunflower seeds and blue cheese. Toss with vinaigrette until evenly coated.
Notes
If you do not like blue cheese, goat cheese tastes great in this salad.
