Black Bean and Corn Salad Recipe

Ingredients

  • 3 Ears of Corn - roasted grilled, etc.
  • 1 15oz Can Black Beans - drained, rinsed
  • 1 Red Bell Pepper - seeds removed chopped
  • 1 Jalapeño - seeds removed chopped
  • 1 Small Red Onion - chopped
  • 12 ounces Cherry or Grape Tomatoes - halved
  • 1 -2 Avocados - pitted chopped
  • Large Handful Cilantro - chopped
  • Juice and Zest of 1 Lime
  • 2 Tablespoons Avocado Oil
  • 1/4 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • Salt/Pepper

Instructions

  • Cook your corn any way you prefer. Air Fryer Corn on the Cob, Roasted Corn, Grilled Corn, Boiled Corn or even Pressure Cooker Corn.
  • Cut corn kernels from cobs.
  • Combine corn, black beans, bell pepper, jalapeño and onion.
  • Gently stir in tomatoes, avocado and cilantro.
  • Mix the dressing ingredients: lime juice, avocado oil, cumin and chili powder.
  • Toss salad with dressing. Salt and pepper to taste.
