Ingredients

  • 1/2 Medium Seedless Watermelon
  • 8 ounces Fresh Blueberries
  • 8 ounces Fresh Blackberries
  • Handful of Mint - chopped or sliced
  • 1 Medium Lime
  • 2 Tablespoons Honey
  • Pinch Sea Salt

Instructions

  • Slice watermelon then remove rind. Chop watermelon into bite sized pieces.
  • In large bowl, combine watermelon, blueberries, blackberries and mint.
  • Mix together lime juice, honey and salt. Pour mixture over watermelon and berries.
  • Toss until watermelon and berries are evenly coated with dressing.

Notes

For a fun presentation: hollow out half of the watermelon rind. Fill it with the prepared salad. Garnish with mint and thinly sliced lime.
