In large soup pot, brown ground beef. Set aside and drain any excess grease from pot (leaving approx 2-3 Tb).
Over medium/high heat, sauté onion, celery, carrot and green pepper in grease. Add more oil if needed.
Once vegetables are tender add garlic and sauté 1 minute.
Return ground beef to to pot and add brown mustard, Italian season and smoked paprika. Stir.
Add beef broth, crushed tomatoes and thyme. Bring to a boil, reduce heat and simmer 15-20 minutes.
Add cabbage and simmer until cabbage is tender (10-15 minutes). Salt and pepper to taste. Add more broth or water if extra liquid is desired.
Serve as is or over rice.
