Preheat oven to 375ºF - Prepare baking sheet with parchment paper.
Whisk together slaw dressing ingredients: mayo, yogurt, mustard, honey, vinegar, salt and pepper. Mix the dressing together with the cabbage and cilantro. Set aside to marinate while the nachos are baking.
Layer ½ tortilla chips, queso, shredded cheese and brisket, then layer the rest of the tortillas chips, queso, cheese and brisket.
Bake in the oven for 8-10 minutes until the cheese melted.
Remove from oven then add slaw mix, extra BBQ sauce and any other toppings you prefer. Serve immediately.
