With your eggs ready to use - cut them into halves, lengthwise. Then gently remove the yolks and place into a bowl.
Add mayonnaise and sriracha sauce - mix with the yolks. Use a fork to combine until you achieve a smooth paste. Optional: add chopped chive to the yolk mixture. Note: if you use a piping bag to fill the eggs, adding chive to the mixture will block up the tip of the piping bag.
