Asian Cucumber Salad Recipe

This Asian Cucumber Salad Recipe is fresh, cool and perfect for summer. Use a spiralizer or just slice your cucumbers then toss with a flavorful Asian dressing. This salad is Paleo, Gluten Free, Grain Free and makes a wonderful side dish.

Ingredients

Salad

  • 2 English Cucumbers (spiralized)
  • 1 Tablespoon Black and Tan Sesame Seeds
  • Handful Cilantro (chopped)

Dressing

  • 2 Tablespoons Toasted Sesame Oil
  • 1 Tablespoon Rice Vinegar
  • 1 Tablespoon Coconut Aminos (or soy sauce)
  • 2 teaspoons Honey
  • Pinch Red Chili Flakes
  • 1 teaspoon Fresh Grated Ginger
  • Salt to taste, if needed

Instructions

  • Combine salad ingredients in large bowl.
  • Whisk together dressing ingredients and pour over cucumbers.
  • Toss cucumbers in dressing to coat. Serve.
