Quinoa Tabouleh Salad is a fresh and healthy lunch or dinner. Mint, parsley, tomatoes and lemon make this salad extra flavorful! This recipe is also known as tabbouleh or tabouli.
Man am I in trouble after this summer!?! My daughter starts kindergarten this year and she will finally see what other “normal” kids are eating.
Let me explain. My 5 year old daughter has been eating mostly healthy homemade food her entire life. She is my #1 taste tester. The opposite of picky, this kid will try just about anything!
Her favorite foods are artichokes, prosciutto, cashews and sushi. No Joke. She prefers dark chocolate to milk chocolate. Once I offered her a cupcake and she requested a chocolate beet smoothie instead. I can’t make this stuff up!
And I may have led her to believe that prunes are fruit candy. LOL
So when she starts school the jig is up.
Luckily the folks at PlanetBox sent me these amazing lunchboxes to try out. I’m hoping the shiny boxes and personalized magnets will distract her for awhile.
PlanetBox is part bento box part dinner tray. It has separate compartments for each food to help with portion control. {I need all the prortion control help I can get!}
The boxes secure tightly and are very durable. I can see these lasting for years!
I got to test out the PlanetBox Rover and Shuttle. Both have more than enough room for a lunch. My daughter loves the unique style and the magnets, of course.
My favorite part about the PlanetBox is that it is eco-friendly. This style of lunchbox cuts down on the amount of plastic sandwich bags I will use.
For my daughter’s first lunchbox meal I made this flavorful Quinoa Tabouleh Salad. I also included fresh berries, cashews, prosciutto and dark chocolate.
She said it was the best lunch EVER! Yep, she’s a keeper.

Quinoa Tabouleh Salad
Ingredients
- 1 Cup Cooked White Quinoa
- 1/2 Cup Chopped Flat Leaf Parsley
- 1/4 Cup Chopped Mint
- 2 Tablespoons Fresh Lemon Juice
- 10-15 Grape Tomatoes - halved
- 2 Tablespoons Olive Oil
- Pinch Sea Salt and Pepper - to taste
Instructions
- Mix all ingredients together.
- Refrigerate before serving.
Notes
Other optional add-ins: cucumber, onion and garlic.

OMG I want one of those boxes just for me! I love your daughter’s favorites.! She is a smart girl. I remember the pediatrician laughing because my daughter told her her favorite food is sushi. The kids of foodies. I love that used quinoa in this tabbouleh. Such a great change!

Haha! Yes, I’m always thinking how strange it must be to be the kid of a foodblogger. Too bad we don’t live closer, we could get the girls together for a sushi date 😀
