I am all about snackin’!  Gimme appetizers, snacks, little bites and I am a happy girl.

Triscuit Crackers make a regular appearance on my snack trays.  I love that they are perfect for dipping or for layering ingredients on top.  For this type of appetizer you need a cracker that will not crumble and fall apart under pressure.  In this instance the base is as important as the toppings.

Fantastic snacks and appetizers do not need to be complicated.  Sometimes it just takes a few quality ingredients to create a satisfying snack or perfect party appetizer.

Prosciutto, Basil and Mascarpone Bites

First you start with Triscuit Original Crackers.  Add a dollop of creamy mascarpone cheese on top.  Then roll a strip of prosciutto into a flower-like shape.  If you want to make a rosette just tuck the bottom and arrange the prosciutto to look like petals.  (I didn’t want to get too fussy with it) Add some fresh picked basil and you are ready to munch!

*Suggested serving size is two topped crackers per person*

I am always trying to grow an herb garden.  Or should I say, trying to keep my herb garden alive.

I am NOT blessed with a green thumb!

This is my first basil plant of the season.  And I’m sure it will not be the last.

Even though I have to keep replacing dead plants.  My daughter and I enjoy them while we can.  I take her out to help me pick fresh herbs for whatever delicious creation we are working on.

I thought our fresh basil would go nicely with creamy, mild mascarpone cheese and salty prosciutto.

Yep, I was right.  These little Triscuit Bites are heavenly.

My daughter is a big fan!  She loves her prosciutto and Triscuits.  And of course, it is always an extra treat to be able to pick your own fresh herbs.
