Yep, you read that right.  This is my favorite kind of recipe, it has only four ingredients.  That is counting the chocolate chips and the peanut butter.

If you are not a chocolate lover (I guess anything is possible) omit the  chocolate chips from the recipe and then you have 3 ingredient plain peanut butter cookies!

I wouldn’t say these cookies are a completely guilt-free health food.  But as far as cookies go, they certainly aren’t the worst.

You get some protein from the peanut butter, antioxidants if you choose to use dark chocolate chips and they are gluten-free.  We’ll just forget about all that pesky sugar.

If you are the type that likes crunchy cookies then this recipe may not be for you.  But, if like me you prefer soft baked crumbly cookies keep on reading.

Of course you will need your Cookie Making Assistant.  I know I couldn’t do the job without a two year old sticking her little fingers into all of the ingredients.

Ingredients:

1 cup chilled Natural Peanut Butter (nutty or creamy)
1 cup sugar
1 egg
3/4 cup chocolate chips

* Natural peanut butter has a layer of oil at the top of the jar – I drain most of the oil off before chilling in the fridge*

Preheat oven to 365 degrees

Mix peanut butter, sugar and egg until dough is formed.

Incorporate the chocolate chips into the mixture

Form dough into ping-pong sized balls

Lightly flatten the dough balls and place onto a greased cookie sheet

Bake for 13-15 minutes

Allow cookies to cool for 5 minutes then dig in!

Let me know how you like the cookies.  Or if you have any questions about the recipe feel free to contact me.

Thanks for stopping by and I hope you enjoy!
