Easy Quinoa Recipe
I am absolutely in love with the flavor of roasted fruit. All roasted fruits but especially roasted strawberries. If you have never tasted roasted strawberries … Run {don’t walk} to your kitchen and start cooking some strawberries immediately!
I am also a huge fan of the strawberry and balsamic vinegar combination. Actually, I am a bit obsessed with vinegar in general, but balsamic is my favorite.
So when I was contacted by the folks at Mandarano about trying out their Balsamic Glaze & Sauce and developing a recipe, I was definitely interested. I have made my own balsamic reduction before and the flavor is amazing but it takes a bit of time to cook down. The problem is that I never think about making balsamic glaze until the moment I need it. That is why I really love the Mandarano Balsamic Glaze & Sauce, not only does it taste fantastic but it is great to always have a balsamic glaze ready when I need it!
Mandarano sent me a bottle of their Balsamic Glaze & Sauce to use in one of my recipes. I decided to create a dish that would combine the deep balsamic vinegar flavor with sweet roasted strawberries. This combo would be fantastic on oatmeal, crostini or over ice cream. I paired the roasted strawberries and balsamic vinegar glaze with quinoa. So you get the sweet strawberries, tangy balsamic vinegar, nutty quinoa and I added a drizzle of Homemade Crème Fraîche to make this dish extra sumptuous.
Get started by hulling and cutting your strawberries in half. Toss with olive oil and a drizzle of maple syrup or honey {optional}. Roast the strawberries in a glass baking dish and be sure to stir a couple times while cooking.
The roasted strawberries will be soft, bursting with flavor and swimming in an unbelievably delicious syrup.
Quinoa is one of the newest ‘superfoods’ that is really popular right now, and for good reason. It is not only healthy but tastes great too. It can be used in savory or sweet dishes and is extremely versatile.
When the strawberries have been roasting for about 20 minutes, go ahead and get started on the quinoa. The first and most important step is to rinse the quinoa really well! I used a mesh strainer and rinsed the quinoa under running water for a couple minutes. Instead of water, I cooked the quinoa in almond milk. Bring the quinoa and almond milk to a boil over medium heat. Cover and reduce heat to medium/low. Simmer for about 20 minutes or until the almond milk is absorbed. Remove from heat.
Now you are ready to assemble your dish. Start with some quinoa, top with roasted strawberries and some of the strawberry syrup, then drizzle with Mandarano Balsamic Glaze and crème fraîche.

This Roasted Strawberry Quinoa with Balsamic Glaze and Crème Fraîche is the perfect balance of sweet and savory.
Ingredients
Roasted Strawberries
- 1 lb Strawberries, hulled & halved
- 1 Tb Olive Oil
- 1-2 Tb Maple Syrup or Honey, optional
Quinoa
- 1/2 Cup Organic White Quinoa
- 1 Cup Plain Almond Milk
Toppings
- Mandarano Balsamic Glaze
- Homemade Crème Fraîche
Instructions
Roasted Strawberries
- Preheat oven to 350°
- Coat strawberries with olive oil and maple syrup. Transfer to a glass baking dish.
- Bake for about 45 minutes. Stir twice while cooking.
- Remove from heat.
Quinoa
- Using a mesh strainer, rinse the quinoa under running water for a couple minutes.
- Bring the quinoa and almond milk to a boil over medium heat.
- Cover and reduce heat to medium/low.
- Simmer for about 20 minutes or until the almond milk is absorbed.*
- Remove from heat.
Plating
- Place your desired amount of quinoa on the plate, top with roasted strawberries and some of the strawberry syrup, then drizzle with Mandarano Balsamic Glaze and crème fraîche.
- Enjoy!

Strawberries are finally back on the shelves, I bought 4 punnets this morning but my oven died friday night, I’m thinking I could probably do this in the BBQ though it looks lovely and it sounds mouthwatering!

Major Bummer! I hope you are able to get a new oven soon. This could definitely be accomplished on the bbq. Maybe wrap the strawberries up in a foil packet to roast. 🙂

LOVE roasted strawberries! And that balsamic glaze looks great (a nice alternative to having to reduce down balsamic yourself, stinking up the whole house in the process!).
