So, I felt the need to create a Carrot Cake Ice Cream because … Who doesn’t want vegetables in their ice cream? That means it’s healthy, Right?
Ice Cream Ingredients:
3 Tb Honey
1/8 tsp Cinnamon
pinch of Nutmeg
1 cup Half & Half
1 cup Carrot Juice
Swirl Ingredients:
2 Tb Milk
2 Tb Honey
4 oz Cream Cheese
1/2 cup chopped Walnuts
This recipe makes just over a pint of ice cream.
Mix the ice cream ingredients together and use one of the three methods for homemade ice cream. Click Here for detailed instructions on the three homemade ice cream methods.For the ice cream swirl, I used a hand mixer to blend the ingredients. Then place the swirl mixture into the refrigerator until the ice cream is ready.Once the ice cream has been made, gently fold the cream cheese swirl throughout. Try not to fully incorporate the mixture into the ice cream.
