Preheat oven to 350°F
Mix flour, baking powder and salt. Set aside.
Mix eggs, mashed roasted bananas, Greek yogurt, milk, butter, sugar and vanilla.
Stir in chopped nuts and dry ingredients until it becomes a thick batter.
Transfer batter to a standard loaf pan that has been sprayed with nonstick.
Bake for 47-50 minutes or until a toothpick can be inserted and removed clean.
Allow bread to cool in pan for 5 minutes then transfer to a cooling rack.
Once cooled, slice and serve.
