Super Moist Banana Bread

Ingredients

  • 4 Bananas roasted - see instructions
  • Cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Sea Salt
  • 2 Large Eggs
  • 1/2 Cup Plain Greek Yogurt
  • 1/2 Cup Whole Milk
  • 2 Tablespoons Softened Unsalted Butter
  • 1/3 Cup Dark Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1/2 Cup Chopped Pecans or preferred nut optional

Instructions

Roasting Bananas

  • Preheat oven to 400°F
  • Remove banana peels and slice each banana in half, lengthwise. Place bananas flat side down on a rimmed baking sheet that has been generously coated with oil. Brush tops of bananas with additional oil.Roast for 20-25 minutes, flip bananas half way through. Cool 5-10 minutes before making bread. *Do not roast bananas too far ahead of time because they will become tough and dry*

Banana Bread

  • Preheat oven to 350°F
  • Mix flour, baking powder and salt. Set aside.
  • Mix eggs, mashed roasted bananas, Greek yogurt, milk, butter, sugar and vanilla.
  • Stir in chopped nuts and dry ingredients until it becomes a thick batter.
  • Transfer batter to a standard loaf pan that has been sprayed with nonstick.
  • Bake for 47-50 minutes or until a toothpick can be inserted and removed clean.
  • Allow bread to cool in pan for 5 minutes then transfer to a cooling rack.
  • Once cooled, slice and serve.
