Spiced Baked Apples, Pears and Mandarins

These Spiced Baked Apples, Pears and Mandarins topped with Pecans and Pomegranate are a simple vegan dessert or topping. In less than 15 minutes you can have a fresh and flavorful fruit topping for yogurt, oatmeal or cheesecake. This roasted fruit is good enough to eat on its own. This recipe is vegan, Paleo, dairy free and gluten free.

Ingredients

  • 3 Bartlett Pears (cored & sliced)
  • 3 Gala Apples (cored & sliced)
  • 6 Mandarin Oranges (peeled & segmented)
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Ground Ginger
  • Small Pinch Nutmeg
  • 1/4 Cup Thrive Culinary Algae Oil
  • 1 Pomegranate - seeded (or approx 1 cup pom seeds)
  • 1 Cup Roasted Pecans or Walnuts
  • 3 Tablespoons Maple Syrup (optional)
  • Flaked Sea Salt

Instructions

  • Grease a rimmed baking sheet and preheat broiler on high.
  • In large bowl toss together pears, apples, oranges, cinnamon, ginger, nutmeg and oil. Transfer to prepared baking sheet.
  • Broil on high (on the middle rack) for 10-12 minutes or until fruit is tender and slightly browned.
  • Remove from oven and immediately add pomegranate seeds, pecans and drizzle maple syrup over the top. Finish with flakes salt.
  • Serve immediately or store in an airtight container until use.
