Spaghetti Meat Sauce with Spinach

Ingredients

  • 1 Lb Ground Beef
  • 1 Sweet Onion - chopped
  • 3 Garlic Cloves - peeled grated
  • 1 Tablespoon Dried Italian Seasoning
  • 1 teaspoon Smoked Paprika*
  • 28 ounce can Diced Fire Roasted Tomatoes
  • 1/2 Cup Water
  • 5 ounces Fresh Baby Spinach
  • Salt/Pepper - to taste
  • optional: small pinch sugar small pinch crushed red pepper
  • 16 ounces spaghetti - cooked according to instructions

Instructions

  • Brown ground beef in sauce pot. Drain oil if needed.
  • Add onion and garlic. Sauté 5 minutes over medium/high heat.
  • Add Italian seasoning, smoked paprika, salt and pepper. Stir to coat meat.
  • Add tomatoes and water. Simmer for 10 minutes.
  • Add spinach and simmer for 5 more minutes or until spinach is wilted.
  • Salt and pepper to taste. Add a small pinch of sugar to balance sauce, if desired. Add a pinch of crushed red pepper for some heat.
  • Serve with cooked spaghetti and parmesan cheese.

Notes

*Smoked paprika is not traditionally added to pasta sauce but I like the smoky flavor it adds. Feel free to omit if preferred.
