Quinoa Buffalo Bites

Ingredients

Quinoa Bites

  • 1 Cup Cooked Quinoa
  • 2 Large Eggs
  • 1/4 Cup Grated Carrot
  • 1/4 Cup Finely Chopped Celery
  • 3 Tablespoons Buffalo Wing Sauce
  • 1/4 Cup Shredded Cheddar Cheese
  • 1/4 teaspoon Salt

Blue Cheese Dip

  • 1/2 Cup Nonfat Plain Greek Yogurt
  • 2 Tablespoons Crumbled Blue Cheese

Instructions

Quinoa Bites

  • Preheat oven to 350°F
  • Spray 12 mini muffin tins with nonstick spray. Set aside.
  • Combine all ingredients and transfer to mini muffin tins.
  • Bake for 30-35 minutes.
  • Immediately transfer to cooling rack.

Blue Cheese Dip

  • Combine Greek yogurt and blue cheese. Stir vigorously to incorporate.

Notes

This recipe makes 12 quinoa bites. Each Quinoa Buffalo Bite equals 1 Weight Watchers Point.
The entire batch of Blue Cheese Dip equals 4 Weight Watchers Points.
