Ingredients

  • 1 lb Boneless Skinless Chicken Breasts
  • 2 tablespoons Olive Oil - divided
  • 1 tablespoon Cajun or Blackened Seasoning

Instructions

  • Pat the chicken breasts with a paper towel.
  • Drizzle 1 tablespoon olive oil and seasoning on top of the chicken. Rub until all of the chicken is coated.
  • Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon of olive oil.
  • Add the chicken breasts and cook for 5 minutes. Flip and fry for 3-5 more minutes depending on thickness. Cook until an internal temperature reaches 165º F. Remove to a plate and let rest until ready to slice and serve.

Notes

Use a meat thermometer and cook your chicken to 165ºF internal temp. Cook time will vary quite a bit depending on thickness and size of the chicken, how cold the chicken is, how hot your pan is, etc. The only way to guarantee perfectly cooked chicken is by using a thermometer.
