Ingredients

  • cup white wine vinegar
  • 3 tablespoons water

  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 large chilled english cucumbers thinly sliced
  • 1 medium red onion thinly sliced
  • 2 tablespoons freshly chopped dill

Instructions

  • In a medium dish or bowl, combine the vinegar, water, and sugar until the sugar has completely dissolved.
  • In a very large bowl, add the sliced cucumbers and the sliced onion. Add the salt and pepper.
  • Pour the vinegar mixture over the cucumbers.
  • Add the fresh dill. Mix everything together gently to coat the cucumbers. Let the mixture sit for 5 minutes before serving.

Notes

If you want to soften the onions and create a more mild flavor, soak the sliced onions in the vinegar for 20-30 minutes before preparing the salad.
