In a 3.5 quart pot (or larger) over medium heat, lightly brown ground beef with onion. Drain and return to pot.
Add zucchini, mushrooms and garlic. Cook for 3 minutes.
Add dried herbs/spices, salt, water, tomatoes, and tomato paste. Bring to a boil.
Add uncooked pasta, reduce heat to low. Cover and simmer for 10-15 minutes, stir occasionally. (until pasta is cooked)
Remove from heat. Serve with ricotta, parmesan and basil.
Notes
*I used Tirali pasta. Use your preferred noodle. Some stores sell miniature lasagna noodles that would be perfect in this. Makes 12-14 Cups Lasagna Casserole
