One Pot Lasagna Casserole

This easy weeknight dinner will be a new family favorite.  One Pot Lasagna Casserole at your dinner table in 30 minutes or less!

Ingredients

  • 1 lb Ground Beef 80/20%
  • 1/2 White Onion - chopped
  • 2 Cups Water
  • 1 Can Petite Diced Tomatoes 28oz
  • 1 Can Tomato Paste 6oz
  • 2 Cups Uncooked Pasta*
  • 1 Zucchini - sliced then quartered
  • 12 ounces Button or Crimini Mushrooms - quartered
  • 1/2 teaspoon Garlic Powder
  • 3 Garlic Cloves - chopped
  • 1/4 teaspoon Dried Oregano
  • 1/4 teaspoon Dried Basil
  • 1/4 teaspoon Onion Powder
  • 1/8 teaspoon Dried Thyme
  • 1/2 teaspoon Sea Salt

Instructions

  • In a 3.5 quart pot (or larger) over medium heat, lightly brown ground beef with onion. Drain and return to pot.
  • Add zucchini, mushrooms and garlic. Cook for 3 minutes.
  • Add dried herbs/spices, salt, water, tomatoes, and tomato paste. Bring to a boil.
  • Add uncooked pasta, reduce heat to low. Cover and simmer for 10-15 minutes, stir occasionally. (until pasta is cooked)
  • Remove from heat. Serve with ricotta, parmesan and basil.

Notes

*I used Tirali pasta. Use your preferred noodle. Some stores sell miniature lasagna noodles that would be perfect in this.
