Ingredients

Chicken

  • 2 Lbs Boneless Skinless Chicken Breasts, (pounded to equal thickness)
  • Olive Oil
  • Salt/pepper

Chicken Salad

  • 4 Celery Stalks (chopped)
  • 1/2 Cup Mayonnaise
  • 2 Tablespoons Stone Ground Dijon Mustard
  • Salt/Pepper to taste
  • 5 Cutie Mandarin Oranges (peeled & segmented)

Instructions

Chicken

  • Preheat oven to 450ºF
  • Coat chicken breasts with olive oil, salt and pepper then transfer to a roasting dish.
  • Roast for 25-30 minutes or until 165ºF internal temperature. (time will vary depending on thickness of chicken)
  • Let cool then chop or shred chicken.

Chicken Salad

  • Combine chopped chicken, chopped celery, mayo, mustard, salt and pepper. Stir until combine.
  • Add mandarin oranges then gently stir.
