Ingredients

  • 3 Lbs Gold or Red Potatoes
  • 1 Cup Chopped Cooked Bacon 5-7 slices
  • Cups Shredded Sharp Cheddar Cheese
  • 1 Cup Sour Cream
  • 1/2 Cup Mayonnaise
  • 3 Green Onions - sliced/chopped
  • Handful Fresh Parsley - chopped
  • Salt/Pepper - to taste

Instructions

  • Cut potatoes into uniform bite size chunks. Boil in salted water until fork tender. Drain and cool.

  • Combine potatoes, bacon, cheese, sour cream, mayo, green onions, parsley, salt and pepper. Stir until fully mixed.
