JENNIFER ANISTONS SALAD RECIPE - A simple blend of quinoa, chickpeas, cucumber, feta, onion, pistachios, tomatoes, avocados and peppers tossed in a vinaigrette.
1. Rinse the quinoa before cooking. Cook quinoa according to package instructions. Transfer quinoa to a large salad bowl, let cool. 2. Add in the remaining salad ingredients. Toss and set aside. 3. In a small bowl, add the vinaigrette dressing ingredients and whisk until incorporated. Pour over salad, gently toss, and serve.
Notes
Store leftovers in an airtight container for 3-4 days in the fridge.
