Instant Pot Pressure Cooker Artichokes

Pressure Cooker Artichokes are quick, easy and come out perfectly tender. No more lengthy cooking times. These Instant Pot Artichokes are ready in just about 30 minutes.

Ingredients

  • 3 Large Artichokes
  • 1 Cup Water
  • 3 Tablespoons Olive Oil (optional)
  • Flaked Sea Salt

Instructions

  • Use a very sharp knife, carefully slice the top off of your artichokes then slice off the stem.
  • Optional: use scissors to trim all the spikes off of the ends of the leaves.
  • Run the artichokes under water to rinse. Then gently open the leaves on the top to loosen up the choke.
  • Place the rack inside the Instant Pot. Add water and the artichokes. Drizzle oil in the top of each artichoke. Sprinkle with salt.
  • Attach lid and set valve to sealed position. Pressure cook on high for 20 minutes. Manually release pressure.
  • Serve with preferred dip. (I mix mayo, fresh parsley, fresh dill, lemon juice, salt and pepper)

3 large artichokes fit inside an Instant Pot. For 4 servings, buy small/medium artichokes.
