Prevent your screen from going to sleep
Preheat oven to 400°
Wash carrots. Trim the greens if necessary. Cut in half lengthwise. (this will ensure even cooking)
Coat carrots with a generous drizzle of olive oil.
Arrange carrots in an even layer on baking sheet.
Salt, pepper and season aggressively.
Roast until desired doneness. 25 minutes for small carrots. Upwards to 45 minutes for larger carrots.
