Combine pancake mix, egg, milk, and two teaspoons of vegetable oil in a bowl.
Mix on high until well combined. It needs to be rather thick. Not super runny.
Add oil to a deep skillet, around 3 inches deep. Place batter in a piping bag.
Once your oil is heated to 375ºF, cut a small tip off piping bag.
Drizzle batter into the hot oil in a circular motion. It doesn’t have to be perfect.
Let it fry for about two minutes, then gently press down into the oil with spatula to fry the top as well. Once it is golden brown, remove from the oil and place on a plate lined with paper towels. Repeat steps to make second funnel cake.
Cover in powdered sugar and or other toppings.
