Easy Roasted Corn Salsa

Ingredients

Can Unsalted Crushed Tomatoes - drained

Garlic Cloves

Small Jalapeños - stems and seeds removed

Juice of 1 Lime
▢

Small Red Onion - roughly chopped
▢
Handful Fresh Cilantro
▢
Pinch
Salt/Pepper

Cumin

Generous Pinch Sugar

Cup
Frozen Roasted Corn - thawed*
Instructions
Place all ingredients except corn into blender or food processor.
Pulse until all ingredients are finely chopped.
Stir in roasted corn.
Refrigerate overnight for best flavor.
Creamy Cilantro Lime Dip
Combine 1 cup sour cream, zest of 1 lime and handful of chopped fresh cilantro.
Notes
*If you are unable to find frozen roasted corn, regular corn works too. Or use fresh roasted corn.
