Easy Roasted Corn Salsa

Ingredients

  • 28 ounce Can Unsalted Crushed Tomatoes - drained
  • 4 Garlic Cloves
  • 2 Small Jalapeños - stems and seeds removed
  • Juice of 1 Lime
  • 1/2 Small Red Onion - roughly chopped
  • Handful Fresh Cilantro
  • Pinch Salt/Pepper
  • 1 teaspoon Cumin
  • Generous Pinch Sugar
  • 1 Cup Frozen Roasted Corn - thawed*

Instructions

  • Place all ingredients except corn into blender or food processor.
  • Pulse until all ingredients are finely chopped.
  • Stir in roasted corn.
  • Refrigerate overnight for best flavor.

Creamy Cilantro Lime Dip

  • Combine 1 cup sour cream, zest of 1 lime and handful of chopped fresh cilantro.

Notes

*If you are unable to find frozen roasted corn, regular corn works too. Or use fresh roasted corn.
