Easy Pea Soup with Lemon and Thyme

Ingredients

  • 16 ounces Frozen Peas - thawed
  • 1/2 Cup Fresh Lemon Juice * 2-3 lemons
  • Leaves from 1 Sprig of Fresh Thyme
  • 1 Tablespoon Sugar
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Ground Pepper
  • 2 Tablespoons Olive Oil
  • 1/2 Cup Water add more for a thinner soup

Toppings

  • Crème Fraîche
  • Flaked Sea Salt
  • Fresh Thyme

Instructions

  • Process all soup ingredients in blender until smooth. (Using Vitamix - process on variable 7 until smooth then process on high for 30 seconds.)
  • Serve cold or transfer to pot over medium/low until hot.
  • Serve with salt, fresh thyme and crème fraîche.

Notes

*This amount of lemon juice produces a tangy soup. Decrease this amount if a more mild flavor is preferred.
