Ingredients

Frozen Peas - thawed

Cup
Fresh Lemon Juice *
2-3 lemons

Leaves
from 1 Sprig of Fresh Thyme
▢

Tablespoon
Sugar

teaspoon
Sea Salt
▢
1/4
teaspoon
Ground Pepper
▢

Olive Oil
▢
1/2
Cup
Water
add more for a thinner soup
Toppings
▢
Crème Fraîche
▢
Flaked Sea Salt
▢
Fresh Thyme
Instructions
Process all soup ingredients in blender until smooth. (Using Vitamix - process on variable 7 until smooth then process on high for 30 seconds.)
Serve cold or transfer to pot over medium/low until hot.
Serve with salt, fresh thyme and crème fraîche.
Notes
*This amount of lemon juice produces a tangy soup. Decrease this amount if a more mild flavor is preferred.
