Ingredients

  • 4 Lobster Tails
  • 1/2 Cup Unsalted Butter
  • Zest from 1 Lemon
  • Juice from 1/2 a Lemon
  • Generous Pinch Salt/Pepper
  • Fresh Parsley - finely chopped

Instructions

  • Prep lobster tails: Use sharp kitchen scissors to cut from open end to the tail fins. Pull the lobster meat out of the shell to sit on the top, leaving it attached at the tail end. Remove dark vein down the middle of the lobster meat.
  • Preheat broiler on high 500ºF
  • Combine melted butter, lemon zest, lemon juice, salt and pepper. Set half aside for dipping.
  • Place lobster tails onto rimmed baking sheet. Spoon half of butter mixture over the tops of the lobster tails.
  • Broil on high (500ºF) 8-10 minutes or until cooked through. (When done lobster tails will have a bright red shell and white meat. The internal temp will be 140º-145ºF.) Time will vary depending on size of lobster tails.
  • Sprinkle with chopped parsley, salt and pepper. Serve with remaining melted butter mixture for dipping.
