Double Pork Baked Beans

Ingredients

  • 1 pound Thick Cut Bacon
  • 1 Small White Onion - chopped
  • 2 Cups Pulled Pork
  • 2 Cups Organic Ketchup
  • 1/4 Cup Water
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Ground Pepper
  • 1/4 Cup Brown Sugar
  • 2 Tablespoons Apple Cider Vinegar
  • 2 teaspoons Worcestershire Sauce
  • 1 Tablespoon Yellow Mustard
  • 1 Tablespoon Dark Molasses
  • 1/2 teaspoon Tabasco Sauce or more for spicy beans
  • 2 Cans Red Kidney Beans - drained/rinsed 15 oz
  • 1 Can White Beans - drained/rinsed 15 oz
  • 1 Can Pinto Beans - drained/rinsed 15 oz

Instructions

  • Preheat oven to 350°F
  • Mix ketchup, water, garlic powder, pepper, brown sugar, vinegar, Worcestershire sauce, mustard, molasses and Tabasco. Set aside.
  • In large pot; fry bacon until firm but not crisp. Transfer from pot to plate lined with paper towels. Leave bacon grease in pot. Roughly chop bacon into bite sized pieces.
  • Add chopped onions to pot with bacon grease. Cook over medium heat while stirring for 2-3 minutes or until onions are translucent.
  • Stir in pulled pork and reduce heat to medium/low.
  • Add beans, premixed sauce and half of the cooked bacon. Stir while cooking for 5 minutes.
  • Transfer to large casserole dish, top with remaining bacon and cover with foil.
  • Bake for 30 minutes. Remove foil and bake uncovered for 20 more minutes.
