Ingredients

  • 1 English Cucumber - sliced into half moons
  • 1 Lb Vine Tomatoes - chopped
  • 2 Tablespoons Olive Oil
  • 2 teaspoons White Wine Vinegar or White Balsamic Vinegar
  • 1 Garlic Clove - grated
  • 1 teaspoon Dried Italian Season
  • 2 Tablespoons Finely Chopped Fresh Parsley
  • Salt/Pepper

Instructions

  • Combine cucumbers and tomatoes in large mixing bowl.
  • Whisk together oil, vinegar, garlic, Italian seasoning and parsley.
  • Toss cucumbers and tomatoes with dressing. Salt and pepper to taste. Serve cold.
