COTTAGE CHEESE TOAST WITH POACHED EGG
COTTAGE CHEESE TOAST WITH POACHED EGG is a nutritious breakfast or snack. Toast topped with cottage cheese, arugula, roasted cherry tomatoes and a poached egg.
Tomatoes: Preheat oven to 375F. In a small baking dish, toss cherry tomatoes with olive oil and oregano. Transfer to oven and bake to desired tenderness (20-25 minutes).
Poached Eggs: Crack egg into a fine mesh strainer to separate the watery white from the egg. Heat several inches of water to a light boil. Lower heat to bring water to a gentle simmer. Gently transfer eggs to the hot water. Cook for 4 minutes for soft whites with runny yolk. For firmer poached eggs - 5-6 minutes.
Toast: Toast bread slices in toaster or oven. Spread toast with cottage cheese. Top with roasted tomatoes and arugula. Top with poached egg. Sprinkle with salt and pepper to taste.
