Cilantro Lime Chicken Salad
No I will not stop with all these chicken salad recipes! This Cilantro Lime Chicken Salad brings two of my all-time favorites together. Cilantro Lime with avocado is perfection. This dish is great for lunch, dinner and meal prep. It is Paleo, Whole30, Dairy Free, Gluten Free, Grain Free and so, so tasty!
Serve over salad or rice. Also makes great wraps and sandwiches.
Notes
*My preferred method: Preheat oven to 450ºF. Coat chicken breasts with olive oil, salt and pepper then transfer to a roasting dish. Roast for 25-30 minutes or until 165ºF internal temperature. (time will vary depending on thickness of chicken) Let cool then chop or shred chicken.**Optional Add-Ins: Lime Zest (for extra lime flavor), chopped celery, cumin and/or chili powder.
