Caribbean Inspired Salted Cod

Ingredients

  • 1 Lb Cod - poached chilled then flaked
  • 1/2 Red Bell Pepper - chopped
  • 1/2 Small Red Onion - chopped
  • Juice of 1 Lime
  • 2 Tablespoons Avocado Oil or olive oil
  • 1/2 teaspoon Sea Salt or less if preferred
  • Handful Fresh Cilantro - chopped
  • 1/2 Avocado - chopped or sliced

Instructions

  • Mix all ingredients.
  • Best if refrigerated for 1 hour before serving.

Notes

Tastes great with quinoa!
