BAKED BUTTERMILK CHICKEN

Ingredients

  • 3 chicken breasts boneless, skinless
  • 3 chicken thighs boneless, skin on
  • salt/pepper
  • ½ cup buttermilk
  • 1 egg - beaten
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 teaspoon cayenne pepper
  • 2 cups panko breadcrumbs

Instructions

  • Preheat the oven to 410ºF.
  • Place chicken breast and chicken thighs in a large bowl. Season with salt and pepper. Pour buttermilk and egg onto chicken. Toss to cover the chicken pieces. Set aside for 15 minutes.
  • In a small bowl, combine oregano, garlic, salt, cayenne pepper and panko breadcrumbs.
  • Generously grease a baking sheet.
  • Dredge the chicken one by one in the panko breadcrumb mixture. Place on the baking tray. Spray with cooking spray.
  • Bake for 12 minutes then flip carefully and bake for 10 minutes. Finish by broiling for 5 minutes until golden and crispy. Place the baking tray on the counter and allow it to sit for 2 minutes. Cook chicken to 165ºF internal temp.
