Bacon Wrapped Shrimp

Ingredients

  • 20 Jumbo Shrimp - deveined peeled, tail-on (approx 1.5 Lbs)
  • 10 Bacon Slices - cut in half
  • 2 Tablespoons Olive Oil
  • Salt/Pepper
  • 2 Tablespoons Unsalted Butter - melted
  • 2 Tablespoons Brown Sugar
  • 1-2 teaspoons Hot Sauce I love Old Bay Hot Sauce for this recipe
  • Chopped Fresh Parsley

Instructions

  • Preheat oven to 400ºF
  • Place oven safe baking rack on rimmed baking sheet, spray generously with nonstick. Lay bacon strips flat on rack. Bake for 10 minutes or until bacon is par cooked but still pliable. Let cool 5 minutes or until safe to handle.
  • Toss shrimp with oil, salt and pepper.

  • Wrap each shrimp with a piece of bacon. Secure using a toothpick then place onto rack and baking sheet.
  • Bake for 9-13 minutes or until shrimp are almost fully cooked. Flip half way through cook time to achieve crisp bacon on both sides.(time will vary depending on size of shrimp)
  • Mix melted butter, brown sugar and hot sauce. Brush mixture on top of each shrimp.
  • Broil on high 2 minutes or until shrimp are cooked through.
  • Sprinkle with freshly chopped parsley and serve.

Notes

The cook time will vary depending on the size of your shrimp. If you are using shrimp that are a bit smaller, check after 6 minutes of cooking.
The amount of glaze in this recipe is just enough to add a hint of flavor. If you prefer extra saucy shrimp, double the sauce mixture.
Pre cooking the bacon is a must. If it isn't pre-cooked the shrimp will get overcooked or you'll end up with floppy limp bacon.
