Easy Ice Cream Cake
I have been wanting to create a dessert recipe that is over-indulgent and crazy delicious! When I got the opportunity to do a post highlighting Mars Bites, I knew that day had come. So I didn’t hold back on this one. This pie has every amazing flavor that you could want:
Chocolate . . . Vanilla . . . Caramel . . . Milky Way . . . Yum!
This Ice Cream Milky Way Brownie Pie is so hedonistic, it should be illegal! It is a show stopper. Okay, the guys aren’t really going to look away from the football game. But on the commercial break they will surely be amazed, right before they begin to devour it!
Time to get started on the Ice Cream Milky Way Brownie Pie!
This recipe involves multiple steps, but they are all simple. Step One: Make the brownie layer. {recipe below}
Step Two: Chill brownies then top with softened vanilla ice cream.
Return springform pan to freezer until ice cream is firm.
Step Three: Chop your Milky Way Bites into delicious little chunks.
Step Four: Spread a layer of softened chocolate ice cream on top of the vanilla layer.
Step Five: Top with Milky Way Bites and return to freezer. Freeze overnight.
To release the springform, run a wash cloth under hot water and wipe along the outside of the springform pan. Repeat 2-3 times then release the springform and carefully remove the sides.
This pie should be frozen solid, so get one of those football watching manly men to lend you a hand {and some muscle}. The first slice is a little tricky.
Top each slice of Ice Cream Milky Way Brownie Pie with a drizzle of store bought caramel topping . . . Touchdown!
Ice Cream Milky Way Brownie Pie
This Ice Cream Milky Way Brownie Pie is an impressive and decadent game day dessert. Delicious layers of brownies, vanilla ice cream, chocolate ice cream, Milky Way Bites and caramel will have your sports fans cheering!
Ingredients
Brownies
- 1/2 Cup Unsweetened Cocoa
- 2/3 Cup AP Flour
- 1/4 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 Cup Melted Butter, slightly cooled
- 1 Cup Ultra Fine Sugar
- 1 tsp Vanilla Paste or Extract
- 2 Eggs
Ice Cream Pie
- 28 oz Vanilla Ice Cream
- 28 oz Chocolate Ice Cream
- 2 Packages of Milky Way or Snickers Bites, 7 oz
- 1 Jar Caramel Topping
Instructions
Brownies
- Preheat oven to 350°
- Using a fork or whisk; mix the cocoa, flour, baking powder and salt. Set aside.
- In a separate bowl; combine the melted butter, sugar, vanilla and eggs.
- Using a hand mixer; slowly add the dry ingredients to the wet. Mix until just smooth. (batter will be thick)
- Spread evenly into an extra greased 9 inch springform pan.
- Place springform on a cookie sheet and bake for 26-28 minutes or until a toothpick can be inserted and removed cleanly.
- Allow brownies to cool then transfer to the refrigerator or freezer until cold.
Ice Cream Pie
- Wipe the inside of the springform pan to remove any grease residue.
- Top brownie layer with softened vanilla ice cream.
- Return springform pan to freezer until ice cream is firm.
- Chop your Milky Way Bites into delicious little chunks.
- Spread a layer of softened chocolate ice cream on top of the vanilla layer.
- Top with Milky Way chunks and return to freezer. Freeze overnight.
- To release the springform, run a wash cloth under hot water and wipe along the outside of the springform pan. Repeat 2-3 times then release the springform and carefully remove the sides
- Slice and drizzle with caramel topping.

Looks so good! I’ve never made a brownie ice cream cake before. Is the brownie and Milky Way candy hard from being in freezer overnight? How long do you recommend leaving out before serving? Thanks!
Thanks Vicki! I leave it out for about 10 minutes before slicing. The brownies aren’t too hard. The candy can get a little hard, so I recommend chopping into small pieces to keep them from being rock solid. Enjoy!
