Oven Roasted Carrots
If you think that you don’t like vegetables, you should try roasting them. Roasting vegetables and fruit creates an intense flavor that is amazing!
Not only are these roasted carrots unbelievably tasty. They are my daughter’s favorite color. She devoured an entire plate full! {and so did I}
I recently posted recipes for Homemade Spice Blends. I used my Everyday Spice Blend on these roasted carrots. Use your favorite seasoning blend. Just be sure not to add a ton of extra salt if your seasoning blend already includes it.
And the secret to super tasty roasted veggies . . . salt, pepper and season aggressively.
So now that you know How To Roast Carrots, use this method for other vegetables. It is the same process with different cooking times depending on the veggie you choose.
How To Roast Carrots

Ingredients
- 2 Lbs Carrots
- Olive Oil
- Fresh Cracked Salt
- Fresh Cracked Pepper
- Your Favorite Seasoning Blend
Instructions
- Preheat oven to 400°
- Wash carrots. Trim the greens if necessary. Cut in half lengthwise. (this will ensure even cooking)
- Coat carrots with a generous drizzle of olive oil.
- Arrange carrots in an even layer on baking sheet.
- Salt, pepper and season aggressively.
- Roast until desired doneness. 25 minutes for small carrots. Upwards to 45 minutes for larger carrots.
