Due to husbands strict diet I used half pound of extra lean ground beef and half pound of ground turkey rather than the usual ground pork I used to use. Did not add any extra salt. I did dice up a stalk of celery and added half a cup of no sodium ketchup- it added a little bit of zing! This recipe is very good as it stands - I just used what I had handy and leaving out the salt is a must.

These are my absolute favorite beans, and although I love pintos, mayocobas blow them away every time! Seriously, guys, if you have not tried them, you MUST. You will never want to go back to “regular” frijoles again…I buy them in bulk at the local farmers market. This is a good/solid starter recipe. Mayocoba beans are so very creamy and perfect for refry-ing. Also, like one poster mentioned, they are delicious on their own, without mashing. Starting with dried and taking the FEW extra steps is worth it (only requiring patience while they cook). Thanks for posting!! Enjoy!
