Nut Butter Recipe

I absolutely adore baklava.  My mom used to make it once or twice a year when I was a kid.  But what a pain in the butt to make from scratch!

I decided to skip the hassle and make an easy Walnut Butter with the baklava flavors I love!

The possibilities are endless with Baklava Spread!

Enjoy on toast, waffles, muffins, pancakes or graham crackers.

I plan on using it to test out some baklava ice cream or popsicles.  While my mom plans on experimenting with this Walnut Butter Baklava Spread in her next batch of sweet rolls.  {I’m looking forward to that taste-test!}

These gorgeous walnuts are California home grown compliments of my friend Marci’s grandmother.  Her grandma collected and shelled an unbelievable amount of walnuts!  I bought 5 pounds and she had many, many more to sell.

Sheesh!  And I’m too lazy to make authentic baklava.  Grandma is putting me to shame!

The one very important thing to remember while making this Walnut Butter: Do Not Over-Mix!

I did . . . twice.

The first batch transformed into a walnut butter rock after I processed it for a very long time.  It was like an extremely chewy baklava candy.

The second batch, I processed the walnuts into butter then added the other ingredients and continued to process for several minutes.  It turned out a bit gritty in texture.

For the third batch I processed the walnuts into butter, added the other ingredients and pulsed just until incorporated.  Much Better.

Who knew making Walnut Butter could be so tricky!?!

Oh, did I mention you could also just eat this by the spoonful?

Well you can!

In my opinion, this Walnut Butter Baklava Spread is best served on toast with an extra generous drizzle of honey over the top.  That’s my kind of breakfast!

Walnut Butter Baklava Spread

Ingredients

  • 3 Cups Shelled Walnuts
  • 2 Tablespoons Softened Butter*
  • 1/8 teaspoon Ground Cinnamon
  • 1/4 teaspoon Pure Vanilla Extract
  • 1/4 teaspoon Himalayan or Sea Salt
  • 3 Tablespoons Honey I used Orange Blossom Honey
  • 1-2 Tablespoons Brown Sugar optional - for extra sweetness

Instructions

  • Preheat oven to 300°
  • Arrange walnuts in an even layer on baking sheet.
  • Bake for 10 minutes, stirring half way through.
  • Allow to cool at least 20-30 minutes.
  • In a large food processor; process walnuts for approximately 4-5 minutes or until it transforms into a smooth nut butter. Stop to scrape sides of the processor during this time as necessary.
  • Add butter, cinnamon, vanilla, salt, honey and sugar.
  • Pulse until ingredients are incorporated then STOP. Do Not Over Process!
  • Transfer to a clean jar or airtight container and store in refrigerator.
  • Stir before use.
  • Use within 2 weeks because homemade nut butters do not contain preservatives.

Notes

*Omit butter for a dairy free spread.
