In reply to Matt. Just made it, earned major brownie points with the family. left out one bell pepper, added 1 diced jalapeno and 2 poblanos, and was extra generous with the spices. Next time also will add some roma tomatoes. This makes Whole 30 easy.

Thank you for the recipe. Going to try it tonight, will modify it by adding a few jalapenos and poblanos instead of one of the bells. Im somewhat new to cooking and so like the apparent simplicity of sheet pan cooking.
