I know this is an old thread but, anyway, here’s what you did wrong:
You have to remove the pith (white stuff between the fruit and the peel) because it is full of pectin which will ruin your batch.
Personally, i use a vegetable peeler before i use the fruit that way it’s easier to get just the peel.

Not only do you have the scent but also I think the lemon oil from the peel.

What do the peels contribute? Is it only for a pleasant smell?
