The hot pasta cooks the egg and that does something awesome to the way sauces stick to it….

Tastes great! I couldn’t find whole milk ricotta at my grocery store (just part skim) so that’s why I think my sauce didn’t melt and blend properly. Maybe next time will add a bit more whole milk to help it along.
