Didn’t you just love tomato soup and a grilled cheese sandwich when you were a kid? That was one of my favorite lunches. Well I took our childhood favorite and jazzed it up! Best part, it is super simple to make. All you need is a few quality ingredients, a blender and a pot.

I used my shiny new Vitamix 5200 to blend the ingredients into a silky texture. Do any of you own a Vitamix? How did I live so long without this blender!?!?! It has so many speed variables and a tamper (or as I call it, the magic blending wand).

I am now a blendin’ queen! I’ve been blending soups, smoothies, juices, sauces and . . . Margaritas, of course. Dude! This Vitamix can get the margaritas to a slurpee consistency. It’s not a blender . . . it’s a MACHINE! Can you tell I’m just a wee bit excited. Expect many more blender recipes.

I don’t know that it could be much easier. Well, I guess you could open a can and microwave soup. That would be easier . . . but no where near as delicious. This way you get to use quality ingredients and control the amount of salt.

Oh, I almost forgot about the croutons. I just cut a loaf of Ciabatta into chunks. Coated with olive oil, salt, pepper and Italian seasoning. Then baked at 375 until crisp and golden brown. They make the perfect soup toppers!

Easy Tomato Soup

Prep Time: 6 minutes
Total Time: 6 minutes

Ingredients

  • 2 Cans San Marzano Peeled Tomatoes, 28oz
  • 5-6 Roasted Garlic Cloves, or more!
  • 1/2 Cup Carrot Juice
  • 1/4 teaspoon Ground Pepper
  • 1/2 teaspoon Sea Salt

Instructions

  1. Place all ingredients in blender and process on variable 6 for 30-60 seconds.
  2. Transfer to 3.5 quart soup pot.
  3. Bring to a simmer. Gently simmer for 30 minutes.
  4. Add salt and pepper to taste.
  5. Top with croutons, cheese, basil, micro greens, sour cream or whatever you prefer.

Notes

Makes approximately 7 cups.
