Who’s a party animal? Not Me! I’m spending my New Year’s Eve writing this post about Healthy No Cook Oatmeal.
I’m not complaining. I feel really lucky to be able to share my recipes with all of you. I’m still in shock that so many of you wonderful folks keep coming back to my little old blog.
2014 was a really fantastic year for me. I am able to create recipes and work on this blog to make a living. When you find something that you are truly passionate about it changes your life in so many wonderful ways. At least, that has been my experience. I’m so optimistic for 2015 and can’t wait to see what this year brings.
So before we get started on 2015 I want to send out a big Thank You! Thanks for all of your support. Thanks for your feedback … positive and negative.

- 1 Cup Old Fashioned Oats
- 1 Cup Unsweetened Coconut Milk
- 4-5 Large Strawberries - chopped about 1/2 cup
- 1 Tablespoon Sweetener of Choice I used Truvia
- 1/2 teaspoon Pure Vanilla Extract
Combined all ingredients in container. (I use a large mason jar)
Serve with fresh strawberries and a dollop of whipped cream.
