The Progresso Recipe Starters work great for crockpot recipes.  All you need for this Slow Cooker Pork Ragu is pork, a few fresh vegetables and a pouch of Fire-Roasted Tomato Progresso Recipe Starters.  That is it!

For an even easier preparation, you could use chopped frozen onions and sliced frozen carrots instead of fresh.

It has been crazy around my house this last month.  I have been calling a cheese sandwich “dinner” more often than I’d like to admit.  So, I need easy dinner options.

Serving up this Pork Ragu over noodles or rice is simple and delicious!  One hundred times better than a plain cheese sandwich.

Slow Cooker Pork Ragu

Ingredients
  • 6-7 lb Pork Butt Roast - bone in
  • 4 Cup Thick Sliced Carrots
  • 1 Large Sweet Onion - sliced or chopped
  • 5 Garlic Cloves - chopped
  • 1/4 teaspoon Ground Pepper
  • 1/8 teaspoon Salt
  • Pinch of Fresh Thyme optional
  • 1/2 Cup Water
  • 4 Tablespoons Tomato Paste
  • 1 Pouch Fire Roasted Tomato Progresso Recipe Starters 9oz
Instructions
  1. Layer onions on bottom of the slow cooker.
  2. Place pork roast on top of onions and add all other ingredients.
  3. Cover and cook on high for 7 hours.
  4. Shred pork with two forks. Remove bone and continue to cook for 30 minutes.
  5. Serve over cooked pasta or rice. Top with grated parmesan cheese. Salt and pepper to taste.
Recipe Notes
Mix leftover shredded pork with barbeque sauce and serve on a bun. Two dinners for one ... WooHoo!
